I find this product to be very sharp and appealing. Although I considered purchasing the premier model with the hammered finish, I'm satisfied with the handle on this one. Its size suits my smaller hands well. The handle is light and balanced, but its dark color conceals the wood grain pattern. I prefer this over the Miyabi mizu, as it cuts significantly better.
I adore this knife. Suitable for those preferring a smaller blade, its size is ideal for me. It's my go-to tool for daily tasks. Outstanding value and superb quality; I yearn for a complete set.
I've recently tried a Shun knife for the first time and I must admit, it's difficult to go back to other knives after using this one. The cuts are effortless and clean, and the knife is light, well-balanced, and comfortable to hold. I haven't noticed any chipping, but the blade is thinner than my other knives, suggesting it may not withstand heavy use. Compared to my Wusthof knife, the Shun cuts more easily. I even sharpened some old Calphalon Kantana knives and the Shun still outperformed them, albeit with a more delicate feel. Despite the premium price, I was surprised at how close the performance of a sharpened cheap knife came to the Shun. However, given my limited cooking frequency, I'm unsure if the upgrade is worth the investment. For avid cooks, the Shun's superior sharpness and ease of use may justify the expense.
This knife is well-balanced and a delight to use. It brings me joy during cooking sessions. I primarily use it for vegetables and light cuts. I've had it for a while now, and it remains in excellent condition. I ensure it stays dry and sharp for prolonged usage.
I'm very satisfied with the size of this knife for most food cutting tasks. I own four high-quality knives from this series, which along with a paring knife, cover 90% of my kitchen cutting needs. The steel in these knives is excellent, but they require proper cutting and sharpening techniques. I wouldn't recommend them for beginners. Avoid using them on hard surfaces like glass plates and always use a wooden or composite cutting board. Keep the knives sharp to ensure optimal performance. I prefer using a 6-inch sharpening stone for this knife, while the 8-inch knife in the series is more challenging to sharpen due to its length.
The Classic knives are well-built and sharp, yet I believe the hype surrounding them is somewhat overstated. They are simply good knives, not overly fancy or exceptional. Given that they carry the "Classic" label, this aligns with my expectations. I have several from this series in my possession. I would appreciate if there was a greater selection of varieties offered in the Classic version.
