    Este cuchillo ha sido una auténtica sorpresa. Lo pillé porque necesitaba algo más fino y manejable para trabajar con pescado, sobre todo cuando lo fileo para la plancha o para hacer sashimi en casa, y sinceramente... no esperaba que funcionase tan bien por el precio que tiene.

    El filo que trae es brutal. La primera vez que lo usé me daba incluso respeto de lo afilado que estaba. Literalmente atraviesa el pescado como si fuera mantequilla. Lo he usado también con pollo y alguna carne deshuesada, y va igual de bien. El mango tiene una forma bastante cómoda, se agarra bien incluso cuando tienes las manos mojadas, y se nota que el peso está bien repartido.

    Lo llevo usando varias semanas y no he tenido que afilarlo aún, cosa que me ha sorprendido. Eso sí, lo lavo a mano siempre y lo seco al momento, que estos cuchillos buenos como los metas al lavavajillas te los cargas.

    Once you hold this knife and feel the heft, you know it is well made. The blade is sharp out of the box and the knife balances nicely.
    The test in all the blades is sharpness retention and sharpening; not enough usage to make this determination as of yet.

    Oh my! While being extremely careful, I still managed to cut a finger! This is a sharp knife!
    I would consider this more a boning knife than a filet knife, due to the stiffness of the blade. Which is exactly what I wanted. Very well made, razor sharp, and well balanced! I needed this to trim beef brisket in particular. I have a number of German and Swiss knives. I’ve found the Japanese carbon steel to be far superior to any of them. I have an eight inch chef’s knife and this boning/filet knife. I’ve been able to find both at more reasonable prices on Amazon, and I am very happy with both knife purchases. I also found a great deal on a blade sharpener/honer, which has sharpened my other knives beautifully! Amazon products are always easy to research! I’ve been extremely happy with my knife orders, especially the quality for the price!

    This is an excellent product. it is weighted perfectly. I got it to process deer - but have been using it for all kinds of jobs in the kitchen. it has the perfect amount of flex and is sharp.

    The knife is beautiful and made of one piece of metal with the handle as an add-on, very sharp, at least when new. The only issue that I have with it is that it rusts. The instructions said to use mineral spirits if some rust appears, so I imagine it is expected, but it shows up at my first use

    Das Messer hat nach wenigen Wochen Rost auf der Klinge entwickelt was sonderbar ist, zudem scheint sich der Griff zu lösen.Der Verkäufer reagiert überhaupt nicht.nicht empfehlenswert ...

    Das Messer wird in einer Geschenkbox geliefert und man merkt sofort beim auspacken das es sich um eine richtig gute Qualität handelt.Es liegt sehr gut in der Hand mit seinem formschönen Holzgriff und ist echt Rasiermesserscharf.
    Die Verarbeitung ist insgesamt sehr hochwertig und edel.Ein echtes Profimesser zu einem wirklich fairen Preis...

    Discreta la confezione ma il colpo d'occhio lo dà il coltello, molto bene fatto, affilato.
    Dopo i primi utilizzi l'ho ripassato con la pietra e devo dire che si affila con poco e lo tiene bene, potrebbe perdere il filo solo se bisogna sfilettare pesci grossi con grosse lische, flessibile al punto giusto e manico abbastanza spesso, non ostante questo si impunga molto bene.
    È leggero e anche se risulta leggermente lungo per i volatili, impugnandolo verso la lama si riesce a fare un lavoro di precisione disossando piccioni polli ecc..
    Sul pesce riesce a fare passare le sensazioni dalla lama alla mano, dando un Bell filling.
    Qualità prezzo approvata.

    I bought this to actually use to skin and carver up deer. It can be used to carve any type of meat, like filleting fish, chicken, pork, lamb, vegetables, etc. I needed a flexible blade that stays sharp to take the silver off of deer meat but that could also cut tendon and be used to debone and even skin deer to remove the hide. It's been very affective, I may get another to have two. Sometimes getting at the inside and back loins is difficult. A couple is slits with this knife and the loins pull right out. I know not everyone is butchering deer, this is just an example. This is an elegant knife and very sharp. It has an ergonomic comfortable handle, stays sharp, and cleans up easily. The handle can become slick when bloody or fat soaked but is does not stain. Just wipe it off and keep going. Its flex blade really helps get the most meat. It even carves turkey very well. It is designed well and uses carbon steel. Don't put it in the dishwasher. Hand wash it, and then put some olive oil on a paper towel, lightly oil it, and it should never rust. It does not come with a sheath, but the box is thin and designed for the knife so I didn't bother. The price is right! If you need to replace it for any reason, it won't break your bank. I'm sold on it!
